Another scone recipe to add to my collection. These are the best strawberry scones. They are flaky, buttery, sweet, and absolutely wonderful. I am a huge scone lover. There is nothing better than a warm, flaky scone paired with a morning latte. I am pretty sure I could live off of scones. This scone recipe is refined sugar free and made with super simple ingredients.

I used to be so scared of making scones because they looked so intimidating. It took me so long to actually make them and once I did, I realized that they are actually super easy to make. how to make the best strawberry scones

preheat the oven to 375 degrees. 

mix the flour, salt, baking powder, and coconut sugar. 

use your fingers to mush in the cold butter cubes until evenly distributed in about pea sized pieces. 

use your hands to knead in the egg, vanilla, and strawberries (mashing some of the strawberries) until the dough comes together. 

transfer the dough to a floured surface and knead (letting it soak up more flour) until it isnt too sticky. 

form into a circle and cut into 8 scones. transfer to a greased baking sheet, brush with your milk of preference and sprinkle with sugar (OPTIONAL). bake for 22-26 minutes. enjoy!

substitutions

Keep in mind that substituting ingredients may affect the flavor, texture, and bake time. With that said, here are my suggestions:

  • coconut sugar- replace with granulated sugar
  • butter- replace with ghee or vegan butter
  • egg- replace with a flax or chia egg

Ingredients
  

  • 2 cups unbleached all purpose flour
  • 1/2 tsp salt
  • 1 tbsp baking powder
  • 1/2 cup coconut sugar
  • 1/2 cup cold butter (cut into cubes)
  • 1 egg
  • 2 tsp vanilla extract
  • 1 cup diced strawberries
