Heavenly Beef Tips with Gravy

2 lbs beef stew meat or sirloin, cut into 1-inch cubes
Salt and pepper to taste
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 cups beef broth
1/4 cup red wine (optional)
1 tbsp Worcestershire sauce
1 tsp dried thyme
1/4 cup all-purpose flour
1/4 cup water

Instructions

Preparation: Season the beef with salt and pepper. Heat olive oil in a skillet over medium-high heat.
Cooking: Brown the beef on all sides and then set aside. In the same skillet, sauté the onion until softened, then add garlic. Pour in beef broth and red wine, scraping up browned bits. Add Worcestershire sauce and thyme, then return the beef. Simmer on low, covered, for 1 to 1.5 hours until tender. Mix flour and water, then stir into the skillet to thicken the sauce.
Final touches: Garnish with fresh parsley if desired.
Serving: Serve hot over mashed potatoes, rice, or egg noodles.
