gluten free peanut butter chocolate thumbprint cookies

Peanut butter and chocolate… literally my favorite combination on this earth. I talk a lot about my favorite combinations but peanut butter chocolate is my all time favorite. These gluten free peanut butter chocolate thumbprint cookies are UNREAL. They are rich, flavorful, and have the perfect peanut butter to chocolate ratio. These cookies are gluten free, dairy free, and refined sugar free. You can also make them vegan with the substitutions found below.

I have been on a huge chocolate kick all weekend. I’ve done a ton of baking this weekend and pretty much all of it has involved chocolate. So naturally, the little craters in my peanut butter cookies HAD to be filled with chocolate. I am obsessed with these cookies and you will be too. Make sure to comment below and let me know how you like them!

substitutions

Keep in mind that substituting ingredients may affect the flavor, texture, and bake time. With that said, here are my suggestions:

  • coconut sugar- replace with granulated sugar
  • eggs- replace with flax or chia eggs
  • peanut butter- replace with any nut butter
  • chocolate chips- use dairy free/vegan chocolate chips if needed
  • coconut oil- replace with butter, ghee, or melted butter
