Made with whole wheat flour, Greek yogurt, coconut sugar, eggs, and a few other ingredients, these pancakes are the best healthy pancakes!
I am a HUGE pancake eater, pancakes are my go to breakfast on rainy mornings. And no…these are not 2 ingredients, pancakes do not have to have only 2 ingredients to be healthy! I have had the 2 ingredient egg banana “pancakes,” and those are NOT pancakes… they are just egg banana mush. Ingredients in Whole Wheat Greek Yogurt Pancakes
What makes these pancakes healthier? They are refined sugar free and made with whole wheat flour, coconut sugar, coconut oil (healthy fats), and Greek yogurt for some added protein!
- 1 cup whole wheat flour
- 1/4 cup coconut sugar
- 1 tsp baking powder
- pinch of salt
- 1/2 tsp cinnamon
- 1 egg
- 2 tbsp coconut oil
- 1 tsp vanilla
- 1/2 cup greek yogurt
- 3/4 cup almond milk
How to make
Start by mixing the flour, coconut sugar, baking powder, salt, and cinnamon
In a separate bowl, whisk the egg, coconut oil, vanilla, Greek yogurt, and almond milk
Combine the wet and dry ingredients and cook in a greased pan at medium heat
Add your toppings (I’m a simple maple syrup kind of gal) and enjoy!
