guys… these are the best cookies I have ever made in my life. they are unreal. I don’t know what happened in that oven but it was something magical. vegan peppermint chocolate cookies… but don’t let the vegan throw you off. you would have no idea these cookies were vegan if you tried them. think thin mints, but thicker… and better. finished the last cookie last night and I was so sad to see them go. I will definitely be making these again very soon.

these cookies are made with unbleached flour, coconut sugar, cacao powder, peppermint extract, coconut oil, dark chocolate chips, and just a few other simple ingredients. the best Christmas cookies ever… I am so excited for you to try these.

this recipe is made with super simple, healthy, and vegan ingredients. substitutions to fit your needs are below.

how to make vegan peppermint chocolate cookies

preheat the oven to 350 degrees

mix together the flour, coconut sugar, cacao powder, salt, and baking soda

then, mix in the peppermint extract, coconut oil, melted dark chocolate chips, and almond milk

roll into large balls and flatten out a little but (they do best when you form balls with your hands and then roll in your hands and flatten out)

place onto a parchment paper lined baking sheet and bake for 8-10 minutes

make the chocolate mixture by melting and mixing together the dark chocolate chips, coconut oil, and peppermint extract

let cool and then dip into the chocolate mixture

substitutions

keep in mind that substituting ingredients may affect the flavor, texture, and bake time. with that said, here are my suggestions:

  • all purpose flour- replace with 1:1 gluten free flour
  • coconut sugar- replace with half granulated half brown sugar
  • coconut oil- replace with butter

Ingredients

  • 2 cups unbleached all purpose flour
  • 3/4 cup coconut sugar
  • 1/4 cup cacao powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp peppermint extract
  • 1/2 cup coconut oil (melted)
  • 1/2 cup dark chocolate chips (melted)
  • 5 tbsp almond milk

chocolate for dipping

  • 1 cup dark chocolate chips
  • 1 tsp coconut oil
  • 1/2 tsp peppermint extract

Instructions
 

  • preheat the oven to 350 degrees
  • mix together the flour, coconut sugar, cacao powder, salt, and baking soda
  • then, mix in the peppermint extract, melted coconut oil, melted dark chocolate chips, and almond milk
  • form together into balls in your hands and flatten them out a bit. transfer to a parchment paper lined baking sheet and bake for 8-10 minutes.
  • make the chocolate dipping mixture by melting and mixing together the dark chocolate chips, coconut oil, and peppermint extract.

    If you need a girl scout cookie fix, these are just like thin mints, but bigger! Wow… these are so delicious, and you would never know they are healthier than the real deal. I love these so much that I’m making a ton of batches to gift to friends and family!! 🤤🤤🤤
