I am absolutely obsessed with these, they are my new favorite afternoon snack. And even better, they are simple, healthy, refined sugar free, and super protein packed!!!

Not gonna lie, I’m a complete and total carb lover. I have a hard time finding protein dense snacks because I’m always craving carbs. But these… these are the perfect protein dense snack that literally tastes like a decadent dessert. You guys have to try this perfect summer snack.

I wasn’t kidding when I said that this recipe is made with super simple ingredients. The protein powder I use helps sweeten the yogurt and gives it a great flavor so if your protein powder isn’t very sweet you may want to use a little more honey. Here are the ingredients:

  • 1 cup greek yogurt
  • 1/4 cup vanilla protein powder
  • 1/4 cup honey (or a little more if your protein powder isn’t very sweet)
  • 2 cups frozen mixed berries (I used raspberries, blueberries, and blackberries)

start by mixing the Greek yogurt with the protein powder and 2 tbsp of the honey

then, microwave your berries in 30 second intervals and mash them. Put them in pot and mix with the other 2 tbsp honey. Bring to a boil and let simmer for 10-15 mins (stirring frequently)

line a mini muffin tin with mini cupcake holders and spray with nonstick spray. add a little Greek yogurt mixture to the bottom, then add a little of the jam, then a little more Greek yogurt mixture. Repeat; makes about 18 froyo cups.

Let them sit in the freezer until frozen; store in the freezer

TO EAT: they get pretty hard in the freezer so when you want to eat them, heat them on your microwaves defrost setting for a few minutes.

  • greek yogurt- replace with any yogurt or nondairy yogurt of choice
  • honey- replace with maple syrup, agave, coconut nectar, etc.
