This is for sure going to be one of my go to lunch and dinner recipes. The other day I made this sheet pan pesto chicken, potatoes, and veggies for lunch for me and my mom. It turned out absolutely amazing. The pesto adds the perfect amount of flavor and pairs perfectly with the other ingredients. This recipe serves two but you can easily double or triple it to serve more people. It was also incredibly easy to make. Literally all you have to do is throw a few ingredients into the blender, toss your chicken and veggies into the pesto, and bake it!
My mom has been growing so many herbs in our garden so I have been loving adding lots of different herbs to my lunch and dinners. It was so nice to make the pesto with fresh basil from the garden. This is literally the easiest low maintenance lunch or dinner recipe ever. I can not get over how delicious this was, it is definitely one of my new favorite meals. ingredients in sheet pan pesto chicken, potatoes, and veggies (serves two)
- 1 cup fresh basil
- 2 tbsp olive oil
- 2 tbsp parmesan cheese
- 1 tbsp toasted almonds or pine nuts
- 1 tsp salt
- 1/2 tsp pepper
- 1 tsp minced garlic
- 1/2 pound chicken breast (chopped)
- 1 cup cauliflower (chopped)
- 1 cup broccoli (chopped)
- 2 cups potatoes (chopped)
how to make sheet pan pesto chicken, potatoes, and veggies
preheat the oven to 400 degrees.
blend the basil, olive oil, parmesan, nuts, salt, pepper, and minced garlic until smooth.
transfer the chicken, cauliflower, broccoli, and potatoes to a large bowl and toss with the pesto until the pesto is evenly distributed over all of the ingredients.
transfer to a greased baking sheet and bake for 35-40 minutes (depending on if the potatoes are cooked through).
