Second of all, banana bread is the best thing to bake because you can eat it any time of day. Third of all, peanut butter jelly sandwiches are superior to all other sandwiches. PUT IT TOGETHER and you get this masterpiece. It is absolutely amazing. Made with whole foods and no refined sugar because we gotta nourish our bodies right!

By now I have lost count of the amount of banana bread loaves I’ve made… but this is one of my new favorites. The flavors came together perfectly and banana bread is my favorite thing to bake because I can eat it for breakfast, snack, or dessert!

What makes this recipe healthy is that it is made with unprocessed ingredients and no refined sugar! Here are the ingredients:

start by preheating the oven to 350 degrees

then, mix together the flour, coconut sugar, salt, and baking soda

in a separate bowl, mix together the mashed bananas, peanut butter, eggs, vanilla, and almond milk

combine the wet and dry ingredients and pour into a greased loaf pan; bake for 60-65 minutes or until a tooth pick comes out clean

while the banana bread bakes, make the jam: cut up the strawberries and mash them with a potato masher, then mix in the honey and bring to a boil on the stove, let simmer for 20 minutes

once the jam is done, let it sit in the fridge until the banana bread is done. once the banana bread is done, add on the jam, serve, and enjoy!

substitutions

keep in mind that substituting ingredients could change the flavor, texture, and bake time. with that said, here are my suggestions:

  • flour- replace with gluten free flour
  • coconut sugar- replace with regular sugar
  • peanut butter- replace with any nut butter
  • eggs- replace with flax or chia eggs
  • almond milk- replace with any milk or non dairy milk
  • strawberries- replace with any type of berry
  • honey- replace with maple syrup, agave, or any liquid sweetener

  • 1 3/4 cup unbleached all purpose flour
  • 2/3 cup coconut sugar
  • 1/4 tsp salt
  • 1 tsp baking soda
  • 3 ripe bananas mashed
  • 1/2 cup peanut butter (heat in microwave to make it melty)
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup almond milk

strawberry jam

  • 1 pint strawberries
  • 1/4 cup honey

Instructions
 

  • preheat the oven to 350 degrees
