it is officially the first day of October and I am fully in the fall spirit! this healthy spiced apple french toast was the perfect way to celebrate. not to mention it was absolutely delicious. I mean apples + French toast + maple syrup?? it doesn’t get much better than that. I love switching up my fall breakfasts and this one was so much fun. and even better, it makes enough to share with your friends and family! I froze my leftovers and I will definitely be eating them over the next week!

this recipe is made with super simple healthy ingredients, no dairy, and no refined sugar! substitutions are below.
- 1 cup almond milk
- 3 eggs
- 1 tsp vanilla extract
- 2 tsp pumpkin pie spice (1 tsp for the French toast and 1 tsp for the apples)
- 2 tbsp maple syrup
- 10 slices sourdough
- 2 apples, peeled and cut into cubes
how to make healthy spiced apple french toast
start by whisking together the almond milk, eggs, vanilla, 1 tsp of the pumpkin pie spice, and maple syrup.
heat a pan on medium heat and grease with butter or cooking spray of choice. soak each slice of sourdough in the egg mixture and add into the pan. cook on one side until crispy and then flip and cook on the other side until crispy. repeat until you have used all of the bread and egg mixture.
to make the apples, add your apple cubes and pumpkin pie spice into a pan with water. top the pan and let simmer until the apples are soft. drain out the remaining water and add your apples on top of the French toast.
almond milk- replace with any milk of choice
sourdough- replace with bread of choice
