gingerbread and eggnog… two amazing holiday flavors that I combined and made a loaf out of. yes. it is as good as it sounds, and its even healthy! this healthy gingerbread eggnog loaf with cream cheese frosting is all I need in life. it is fluffy, moist, spiced, flavorful, and goes perfect with the cream cheese frosting. everything is better with cream cheese frosting and this loaf is no exception.

this recipe is made with super simple ingredients and no refined sugar. there are also vegan options in the substitutions. this loaf is made with unbleached flour, maple syrup, coconut oil, molasses, spices, eggnog, and cream cheese. I used a healthier eggnog alternative (almond nog) which is also dairy free but either will work fine! this recipe was a family favorite. my mom took some to dinner with her friends and everyone loved it! how to make healthy gingerbread eggnog loaf with cream cheese frosting

preheat the oven to 350 degrees

mix together the flour, salt, cinnamon, nutmeg, ground ginger, ground cloves, and baking soda.

mix in the molasses, melted coconut oil, maple syrup, eggs, vanilla, and eggnog.

transfer to a greased loaf pan and bake for 55-60 minutes.

make the frosting by mixing together the cream cheese and maple syrup. let the loaf cool before spreading on the frosting and then cut into 8 slices.

keep in mind that substituting ingredients may affect the flavor, texture, and bake time. with that said, here are my suggestions:

  • coconut oil- replace with butter, ghee, or vegan butter

  • 1 tsp baking soda
  • 1/4 cup molasses
  • 1/3 cup melted coconut oil
  • 2/3 cup maple syrup
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 cup eggnog

cream cheese frosting

  • 1/2 cup cream cheese
  • 2 tbsp maple syrup

Instructions
 

  • preheat the oven to 350 degrees
  • mix together the flour, salt, cinnamon, nutmeg, ground ginger, ground cloves, and baking soda
  • mix in the molasses, melted coconut oil, maple syrup, eggs, vanilla, and eggnog
  • transfer to a greased loaf pan and bake for 55-60 minutes or until a toothpick comes out clean
  • to make the cream cheese frosting, mix together the cream cheese and maple syrup. wait for the loaf to cool and then spread on the frosting. cut into 8 slices and enjoy!
