Okay guys… I’ve made a lot of banana bread recipes. But I have to say, this is hands down the best banana bread I have ever made. This healthy cinnamon crunch banana bread is simple, sweet, moist, fluffy, crunchy, and absolutely delicious. I had some ripe bananas sitting around yesterday so I decided to get creative and come up with another twist on banana bread. My favorite way to eat it is warm with my morning latte. This morning my dad made French toast with it and he said it was amazing.
All you need to make this recipe is ripe bananas, coconut oil, milk of choice, coconut sugar, unbleached flour, eggs, and just a few other simple ingredients. This recipe is dairy free and refined sugar free. It can also be made vegan with substitutions found below. - ripe bananas
- eggs
- vanilla extract
- coconut oil
- milk of choice
- unbleached all purpose flour
- coconut sugar
- salt
- baking soda
- cinnamon
cinnamon crunch filling
- unbleached all purpose flour
- oats
- coconut sugar
- 1/4 cup pecan pieces
- cinnamon
- coconut oil (melted)
- milk of choice

how to make healthy cinnamon crunch banana bread
preheat the oven to 350 degrees.
whisk the bananas, eggs, vanilla, coconut oil, and milk.
in a separate bowl, mix the flour, coconut sugar, salt, baking soda, and cinnamon.
combine the wet and dry ingredients and set aside.
to make the cinnamon crunch filling, mix the flour, oats, coconut sugar, pecan pieces, cinnamon, coconut oil, and milk to form a crumble.
pour half of the banana bread batter into a greased loaf pan and crumble on 1/2 of the cinnamon crunch filling. pour over the rest of the banana bread batter and top with the rest of the cinnamon crunch filling.
bake for 60-66 minutes or until a tooth pick comes out clean.
serve warm and enjoy!

substitutions
Keep in mind that substituting ingredients may affect the flavor, texture, and bake time. With that said, here are my suggestions:
- eggs- replace with flax or chia eggs
- coconut oil- replace with butter, ghee, or vegan butter
- milk of choice- use any milk of your preference
- all purpose flour- replace with 1:1 gluten free flour
- coconut sugar- replace with brown sugar
