Nothing makes me happier than starting the morning out with a fresh warm scone to go with my latte. These healthier blueberry scones are all I need in life. They are incredibly flaky, moist, buttery, and delicious. Scones can seem a little intimidating to make, but these blueberry scones are super easy to make as long as you follow the instructions.
These scones are made with super simple healthy ingredients and no refined sugar. All you need to make these scones is flour, coconut sugar, any kind of milk, butter, eggs, and blueberries. - unbleached all purpose flour
- coconut sugar
- salt
- baking powder
- cinnamon
- butter
- milk of choice
- egg
- vanilla
- fresh blueberries

how to make healthier blueberry scones
preheat the oven to 400 degrees.
mix the flour, coconut sugar, salt, baking powder, and cinnamon.
mix in the cold butter cubes, mushing them with your fingers until they are evenly distributed in about pea sized pieces.
knead in the milk, egg, and vanilla.
turn the dough out onto a floured surface and knead in the blueberries.
form the dough into a circle and cut into 6 scones. place onto a greased baking sheet and bake for 21-24 minutes. enjoy!
