Peanut butter and chocolate… literally my favorite combination on this earth. I talk a lot about my favorite combinations but peanut butter chocolate is my all time favorite. These gluten free peanut butter chocolate thumbprint cookies are UNREAL. They are rich, flavorful, and have the perfect peanut butter to chocolate ratio. These cookies are gluten free, dairy free, and refined sugar free. You can also make them vegan with the substitutions found below.
I have been on a huge chocolate kick all weekend. I’ve done a ton of baking this weekend and pretty much all of it has involved chocolate. So naturally, the little craters in my peanut butter cookies HAD to be filled with chocolate. I am obsessed with these cookies and you will be too. cookies
- almond flour
- coconut flour
- salt
- baking soda
- coconut sugar
- eggs
- vanilla extract
- peanut butter
chocolate
- chocolate chips
- coconut oil

how to make gluten free peanut butter chocolate thumbprint cookies
preheat the oven to 350 degrees.
mix the almond flour, coconut flour, salt, baking soda, and coconut sugar.
then, mix in the eggs, vanilla, and peanut butter.
roll into balls and use your thumb to make a thumb print in each cookie (make a deep print becuase it gets smaller when they bake) and place onto a greased baking sheet.
bake for 11-15 minutes.
mix the chocolate chips and coconut oil and microwave in 30 second intervals (mixing between each one) until fully melted.
let the cookies cool before spooning a spoonful of the chocolate into the indent in each cookie. enjoy!

substitutions
Keep in mind that substituting ingredients may affect the flavor, texture, and bake time. With that said, here are my suggestions:
- coconut sugar- replace with granulated sugar
- eggs- replace with flax or chia eggs
- peanut butter- replace with any nut butter
- chocolate chips- use dairy free/vegan chocolate chips if needed
- coconut oil- replace with butter, ghee, or melted butter
