here is the story behind these… I woke up this morning at 4:45 a.m. in a full panic for absolutely no reason and I couldn’t sleep. I waited for the sun to rise and then decided to make some gingerbread pancakes. they turned out amazing and cured my morning anxiety. don’t ask why but for some reason making them gluten free just sounded appealing to me this morning. these gluten free gingerbread pancakes are SOOOO fluffy, moist, spiced, and literally tastes like Christmas in a pancake.

made with gluten free flour, spices, coconut oil, egg, molasses, almond milk, and a few other simple ingredients, this is a must try healthy recipe. these pancakes went perfectly with maple syrup and my morning coffee. it also makes several servings so you will have enough for your fam or whoever you want to share with! you guys have to try this recipe. its insane, comment below how you like it!

ingredients in gluten free gingerbread pancakes

  • 1 cup gluten free flour
  • 1 tbsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp ground cloves
  • 1/2 tsp ground ginger
  • 2 tbsp molasses
  • 1 egg
  • 2 tbsp maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp vanilla extract
  • 1 cup almond milk

how to make gluten free gingerbread pancakes

mix together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, cloves, and ginger.

then, mix in the molasses, egg, maple syrup, melted coconut oil, vanilla, and almond milk.

pour into a greased pan and cook on medium low heat.

add your toppings and enjoy!

substitutions

keep in mind that substituting ingredients may affect the flavor and texture. with that said, here are my suggestions:

  • gluten free flour- replace with all purpose flour or whole wheat flour
  • egg- replace with a flax or chia egg
  • maple syrup- replace with honey or agave nectar
  • coconut oil- replace with butter, ghee, or vegan butter
  • almond milk- replace with any milk or dairy free milk
