I’ve never been much of a salad person but I can always get down with a Caesar salad. Decided to make my own this week but I made it 10x healthier. This easy kale Caesar salad was the perfect easy lunch and dinner side that fueled my week. I have had a super busy week and coming home to leftovers has kept me going. This kale Caesar salad is incredibly simple and easy. It has a kale and romaine mixture, parmesan cheese, crispy chickpeas, and a homemade greek yogurt ranch dressing.

ingredients in easy kale caesar salad
- 1 can chickpeas
- 1 tsp olive oil
- 1/4 tsp salt
- 1/4 tsp paprika
- 1/8 tsp garlic powder
- 1/8 tsp pepper
- 2 cups chopped romaine
- 2 cups chopped kale
- juice of 1/2 a lemon
- 1/4 cup parmesan cheese
greek yogurt ranch dressing
- 1/2 cup plain greek yogurt
- 1 tbsp lemon juice
- 1/2 tsp minced garlic
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/2 tsp dried dill
- 1/4 cup water
how to make easy kale caesar salad
preheat the oven to 400 degrees.
strain and rinse the chickpeas then dry them with a paper towel.
toss with olive oil, salt, paprika, garlic powder, and pepper. bake for 25 mins.
squeeze the lemon juice over the kale and massage it with your hands. add the kale, romaine, and parmesan to a bowl.
to make the dressing, mix the greek yogurt, lemon juice, garlic, salt, pepper, dill, and water.
once the chickpeas are done, mix them into the salad and pour on the dressing. you might not use all of the dressing, what isn’t used can be refrigerated for later use.
