This pasta is absolutely amazing, it is so flavorful, creamy, cheesy, and even healthy! Sometimes comfort food is exactly what you need to end the day and why not make it healthier if you can? This recipe is made with gluten free pasta, tomato sauce, greek yogurt, mozzarella, and seasonings. It is seriously so simple and easy for those nights when you are feeling lazy.
Lately I have been having so much fun trying out different gluten free pastas. I have eaten them made from edamame, black beans, lentils, cauliflower, spinach, chickpeas, and last night I tried pasta made from brown rice. The verdict: delicious. I wasn’t kidding when I said this recipe is made with super simple ingredients. Just a few kitchen staples thrown into a pot with your favorite pasta and you’ve got dinner!
- 1 box brown rice fusilli (or 8-10 oz pasta of choice)
- 3/4 cup pasta sauce
- 1/2 cup greek yogurt
- 1/2 cup mozzarella
- 1/4 tsp garlic powder
- 1/4 tsp pepper
- 1/2 tsp salt
- (optional) thyme to top the pasta
how to make 15 minute creamy pasta
start by cooking your pasta according to the box directions
then strain the pasta and put in back in the pot
mix in the pasta sauce, Greek yogurt, mozzarella, garlic powder, pepper, and salt
(heat back up if needed), serve, and enjoy!
- Greek yogurt- replace with sour cream, ricotta cheese, or a vegan yogurt similar to Greek yogurt
- mozzarella- replace with cheese of choice (or vegan cheese)
